The most baroquely complex dish by far is mole (a thick sauce composed of a host of ingredients, including finely ground seeds and chiles, and often containing chocolate), which willingly adapts to available ingredients. Of course, typical Mexican corn-based specialties (tacos, tamales, enchiladas) are prepared all over the map, in the full imaginative range of their local interpretations. Intrepid travelers are in for some pleasant surprises as they wander off the beaten track, where amazing delights await. Pacific seafood tamales, Yucatán’s lemony soup called sopa de lima, jerked beef (tasajo) and roasted grasshoppers in Oaxaca, cactus fruit “cheese” made in San Luis Potosi and Puebla’s celebrated walnut sauce-covered stuffed Chile peppers known as Chiles en nogada, all await the adventuresome. Traditional Mexican cuisine has every right to be nominated as a UNESCO Masterpiece of the Oral and Intangible Heritage of Humanity.

The South

The North
